Potato Bajji
Tasty Bajji to go along with Roti
Ingredients
- Potato - 250 gm or 4 nos
- Turmeric - 1/2 tsp
- Water - 1/2 cup
- Salt - 1 tsp or as per your taste
- Onion - 2 nos, chopped
- Green chilli - 5 nos chopped
- Ginger - 1 " piece crushed
- Curry leaves - 2 stems
- Salt - 1/2 tsp
- Lime juice - 1/2 tsp
For saute :
- Oil - 2 tbsp
- Mustard - 1 tbsp
- Urad dal - 1 tsp
- Dry red chilli - 2 nos
For temper :
Instructions
- Peel the skin of potatoes and wash well
- Cut the potatoes into small cubes
- Pressure cook the potatoes with 1/2 cup of water,turmeric & salt over medium heat ,switch the stove off when the first whistle comes
- Heat oil in a frying pan over medium flame and splutter mustard and urad dal
- Now add dry red chili (cut into half) and curry leaves, stir for 10 seconds
- Then add onion and saute till it is transparent
- Now add green chilli and crushed ginger, saute for 1 minute
- Add cooked potatoes and mash it a little, Add 1/2 cup of water if it is too thick
- Cook for medium - low heat for 2 minutes , at the end add 1/2 tsp of lime juice and 1/2 tsp of salt, mix well
- Switch off the stove and transfer it into a bowl
- Enjoy potato baji with puri or any roti
