Potato Bajji

Tasty Bajji to go along with Roti

Ingredients

  • Potato - 250 gm or 4 nos
  • Turmeric - 1/2 tsp
  • Water - 1/2 cup
  • Salt - 1 tsp or as per your taste
    For saute :
  • Onion - 2 nos, chopped
  • Green chilli - 5 nos chopped
  • Ginger - 1 " piece crushed
  • Curry leaves - 2 stems
  • Salt - 1/2 tsp
  • Lime juice - 1/2 tsp
    For temper :
  • Oil - 2 tbsp
  • Mustard - 1 tbsp
  • Urad dal - 1 tsp
  • Dry red chilli - 2 nos

Instructions

  1. Peel the skin of potatoes and wash well
  2. Cut the potatoes into small cubes
  3. Pressure cook the potatoes with 1/2 cup of water,turmeric & salt over medium heat ,switch the stove off when the first whistle comes
  4. Heat oil in a frying pan over medium flame and splutter mustard and urad dal
  5. Now add dry red chili (cut into half) and curry leaves, stir for 10 seconds
  6. Then add onion and saute till it is transparent
  7. Now add green chilli and crushed ginger, saute for 1 minute
  8. Add cooked potatoes and mash it a little, Add 1/2 cup of water if it is too thick
  9. Cook for medium - low heat for 2 minutes , at the end add 1/2 tsp of lime juice and 1/2 tsp of salt, mix well
  10. Switch off the stove and transfer it into a bowl
  11. Enjoy potato baji with puri or any roti
