Ripe Banana Rolls – Unnakaya

 

Ripe Banana Rolls or Unnakaya is a Nadan snack prepared a lot in Malabar homes, Kerala. It’s sweet and coconutty. Lots of people back home love this as an Iftar special snack or even as a luxury tea snack. Sweet coconut, cashew and raisin filling goes along with the fried banana..like a match made in heaven 😉 Adults and kids love Unnakaya alike. Try making this delicious Unnakaya as your next tea-time snack and enjoy eating with your family, friends or by yourself.


Ingredients


Banana (plantain) – medium ripe – 3 nos

Coconut shredded – 1 cup

Sugar – 4 tbsp

Salt – 1/4 tsp

Cardamom powder – 1/2 tsp

Ghee – 1 tbsp

Cashews – 10 nos splitted

Raisins – 3 tbsp

Oil – 1 cup for fry


Preparation


    •  Cook bananas in a pressure cooker with 1/2 cup water over medium heat for 1 whistle or steam it for approx 10 minutes
    • When it cool, take out and cut in half, remove the black strand from centre
    • Mashed well with your hands or spatula, keep aside
    • In a pan heat ghee over medium heat and fry cashews for few seconds then add raisins, remove this into a plate
    • Now add shredded coconut along with sugar and bring the heat to low – medium
    • Stir continuously for 1 minute, add cardamom powder, salt, fried cashews and raisins, mix well
    • Switch off the stove and keep aside
    • Apply some oil on both palms and take one big lemon size ball from banana mixture
    • Press little with your thumb and make a small round, it should be 1/2 inch thick
    • Stuff 1 tbsp of coconut mixture in the centre, seal carefully and make Unnakkaya shape using your palm
    • Heat oil in a Kadai or pan and deep fry the stuffed banana till it is slightly golden brown in colour
    • Turn in between and remove Unnakkaya into a plate lined with paper towel
  • Enjoy with tea
