Vegetable Upma || ഉപ്മാവ്

 

Easy and quickly prepared vegetable upma. Healthy quick fix breakfast, dinner or a good lunch box. My family members love the bursting flavors this upma has along with vegetable.  Ingredients:


Semolina- 1 cup

Onion – 1 medium chopped

Green chilli – 3 chopped

Carrot – 1/4 cup chopped

Beans – 1/4 cup chopped

Turmeric – 1/4 tsp

Salt – 1 tsp or as per your taste

Water (hot boiled ) – 2 1/2 cup

Lime juice – 1tsp

Coriander leaves – 1 tbsp for garnish

!For temper

Mustard seeds – 1 tsp

Urad dal – 1/2 tsp

Dry red chilli – 2 cut into half

Curry leaves – 2 stems chopped

Oil + ghee 2 tbsp


 Preparation:


In a medium sauce pan fry semolina over medium heat for 3 to 5 minute, Saute continuously and transfer into a bowl

In a same pan heat oil +ghee over medium heat and splutter mustard seeds

When it spluttered add urad dal, then add dry chilli, curry leaves, Saute for few seconds

Add chopped onion, green chilli & saute for 1 minute

Add chopped carrot and beans, saute it for 2 minute

Pour boiled water and add turmeric and salt

Cover the lid and cook for 2 minutes

Now open the lid and bring the heat to medium – low

Add fried samolina gradually and stir it continuously ,so that any lumps form

cover and cook for 2 minutes & garnish with coriander leaves, serve hot with pickle or sugar
