There is a wide variety of fried chicken that you can get from fast food restaurants and star hotels. Most of us are familiar with the regular nadan spicy chicken fry prepared at our home kitchen. Here is an amazing recipe to prepare juicily-spicy-crispy fried chicken at the convenience of your home. All kids and adults crave and love to eat fried chicken at any hour of the day, at a family/friends party or on a movie night :). Surprise everyone with this tasty Buttermilk Crusty Fried Chicken at your next gathering!
Chicken Pieces – 1 kg ( here used 8 drumsticks); whole chicken pieces is fine too
Buttermilk – ( 1 cup milk + 1 tsp lime juice stir set aside for 5- 10 min) – 1 cup or enough to cover chicken pieces
Salt – 1-1/2 tsp
Chilli powder – 1/4 tsp
Green chilli slit lengthwise – 1 nos
Ginger juice crushed – 1/4 tsp or less
Garam Masala – a pinch
Egg – 1 large
Milk – 2 Tbsp
Black pepper – 1 tsp
All Purpose Flour (Maida) – 1-1/2 cup or more
Cornflakes crumbled – 1/4 cup or more (OPTIONAL)
Salt – 3/4 tsp
Baking Powder – 1-1/2 tsp
Baking Soda – 3/4 tsp
Oil – deep fry
Take a deep bowl and mix in buttermilk, salt, chilli powder, green chilli, ginger juice and garam masala
The skin on chicken pieces can be removed if you want – healthier low in fat recommended!
Soak in chicken pieces in this mixture cover with a tight lid or aluminium foil and refrigerate for 3 to 6 hrs or overnight
Take 2 wide bowls and make the dipping mix – lightly beaten egg, milk and pepper in one and breading mix – flour, flakes, salt, baking powder and soda in the other
Take out the marinated chicken and remove the slit green chilli from it. In the next following steps make sure to tap off excess liquid (buttermilk or egg) before dipping into flour mix!
Dip each chicken piece in the egg mix dripping off the excess and place it on the flour – coat it evenly. Repeat this process with all the pieces and let the chicken pieces sit for about 20 minutes or so
Again repeat; dip each of the pieces in the egg mixture and coat it again with flour let it sit for 10 minutes
Meanwhile, heat oil in deep pan over medium-high heat. Note: make sure the heat is right when you put a small piece of batter it rises up to the top and not get burned.
Carefully place each chicken pieces in the oil ( piece must be completely immersed in oil) and deep fry for about 20 min turning occasionally.
Drain the pieces on a paper towel
