Chicken Stew

Ingredients

  • Chicken - 1 kg cleaned & cut into medium pieces
  • Potato - 1 big cubed
  • Onion - 2 large thinly sliced
  • Ginger - 1 tbsp chopped
  • Garlic 1 tbsp chopped
  • Green chilli - 6 nos slit length wise
  • Curry leaves - 2 stems
  • Pepper powder - 1/2 tsp
  • Salt to taste or 1 1/2 tsp
  • Water - 1/2 cup
  • Fresh thick coconut milk - 1 cup (you can use 1/2 cup of coconut powder to make coconut milk)
  • Garam masala powder - 1 tsp
  • Coriander leaves - 1 tbsp for garnish
  • Whole pepper - 1 tsp crushed

Instructions

  1. Heat oil in a deep bottom sauce pan over medium heat
  2. Saute onion until transparent or about 5 minutes
  3. Add ginger, garlic, green chilli and curry leaves, saute well for 1 minute
  4. Add cleaned chicken, pepper powder , salt and water
  5. Cover with a lid and cook over medium heat for 10 minutes
  6. Then add potato cubes and cook it over medium - low heat for 10 minutes or until the chicken and potatoes are tender
  7. Now add fresh coconut milk and cook medium - low heat for 1 minute
  8. Add crushed pepper , garam masala powder & coriander leaves
  9. Switch off the stove & serve hot with any rotis
