Spice Whole Chicken Roast || Kerala Style Kozhi Roast
Spicy, Delicious Flavorful Whole Chicken Roast
Whole Chicken with Skin -1
Butter - 1/2 Cup
Red Chilli Powder - 5 Tbsp (spicy)
Turmeric Powder - 1 Tsp
Garam Masala - 1 Tbsp
Black Pepper Powder - 1 Tbsp
Salt - 1.5 Tsp
Cumin-Fenugreek Powder - 2 Tsp
Coriander Powder - 1 Tbsp or less
Meat Masala - 1tsp
Fresh Ginger-garlic Paste - 2 Tbsp
Lime or Lemon juice - 1
Yogurt - 1Tbsp
Almond Paste - 10 pc made to paste
Pat chicken dry.
Make deep whole in entire chicken.
In low - medium heat melt butter, turn off stove.
Add in all marination ingredients and combine.
Remove to a plate.
Marinate the whole chicken.
Put chicken in refrigerator covered for 3 hrs or overnight
Take out chicken after required time and preheat oven to 400 deg F.
Bake the chicken covered with foil for 30 min.
Take out the chicken and turn over.
Bake the chicken again covered with foil for 30 min
Take out the chicken and bathe in it's juice.
Place the chicken back to over for 30 min while making to sure to bathe it with its juice every 10 min.
TIP : If you do not want too spicy, you can use Red Kashmiri Chilli Powder or reduce the amount of chilli powder used.
