Arikkadukka or Stuffed mussels

Arikkadukka or Stuffed mussels

Famous Malabar Style Ari Kadukka/ Kallummakayi Nirachathu

Ingredients

  • Mussels - 100 nos cleaned
  • Boiled rice - 2 cups
  • Coconut - 3 cup shredded
  • Fennel seeds - 4 tbsp
  • Cumin seeds - 2 tbsp
  • Shallot - 15 nos
  • Onion - 1 small chopped
  • Salt to taste or 3 tsp
  • Raw Rice powder - 2 to 3 cups
    For Batter :
  • Long grain - 1/2 cup soak 3 hours in tap water
  • Chilli powder - 3 tbsp
  • Turmeric powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Green chilli - 1 nos
  • Garlic - 8 cloves
  • Curry leaves - few
  • Salt to taste or 1 1/2 tsp
  • Water - 3/4 cup
    For Fry :
  • Oil - 1 cup
    TIP : Adjust the ingredient quantity according to your taste and number of mussels used.

Instructions

    Prepare rice
  1. In a sauce pan bring 2 litres of water to rolling boil, add rice and remove pan from stove and set aside
  2. Let the rice soak for a minimum of 3 hours
    Clean Mussels
  1. Meanwhile clean the mussels & open each mussel by sliding a blunt knife in through the slit
  2. Remove hairy substance (hold the hair with your fingers and cut it with a knife)
  3. Wash the opened mussels under running water and drain it
  4. Repeat the process
    Prepare Rice Masala Mixture
  1. In a food processor /blender, add washed soaked rice with 2 tsp of salt and 1/2 cup of water
  2. Grind it coarsely & transfer it into a larger bowl
  3. Next add fennel seeds, cumin seeds, shredded coconut & 1/4 cup water in a grinder and grind
  4. Finally add onions & shallots, grind it coarsely
  5. Add this coconut mixture into the rice mixture and knead well
  6. Slowly add enough rice powder to get tight dough
    Fill Mussels
  1. Make a lemon sized ball of rice mixture with your palm
  2. Open the mussel wide and stuff with rice filling and shape it following the sidelines of the shell. (Place your index finger horizontally at top wide part of the shell and slide it downward motion towards the narrow part of the shell)
    Cook Rice Filled Mussels
  1. In a steamer or adachambu bring 1 litre of water to boil.
  2. Stack the mussels on top of each other & steam cook the mussels for 45 minutes in medium heat
  3. Switch off the stove & let it cool for 1/2 an hour
  4. Then slowly remove filling from the shell (use a small spoon for scoop if the mussels are sticky)
  5. Feel free to eat this if you don't like it fried
    Prepare Spicy Batter
  1. In a grinder add above mentioned batter ingredients and grind well
  2. Then dip mussels one by one into the batter and keep aside for minimum thirty minutes
  3. In a pan, heat oil over medium heat when hot place the mussels one by one & fry it until little crispy and gets nice brownish color. Remember to fry all sides of mussels by turning to its sides.
  4. Enjoy eating this hot and spicy Arikadukka or Malabar style Kalummakaya Nirachathu
