Cauliflower Tikka Masala – Version 1

Tasty Cauliflower Tikka Masala

Ingredients

  • Cauliflower - 1 Medium head
  • Potatoes - 2 Medium cubed(1")
  • Oil - 4 Tbsp.
  • Onion - 2 medium chopped
  • Ginger - 1Tbsp. chopped
  • Garlic - 2 Cloves chopped
  • Green Chilli - 4 chopped
  • Cumin Seeds - 1/2 tsp.
  • Coriander Powder - 1 Tbsp.
  • Turmeric Powder - 1/4 Tbsp.
  • Chilli Powder - 1 Tbsp.
  • Garam Masala - 1 tsp.
  • Coconut Milk - 1/2 can
  • Water - 1 cup.
  • Salt - to taste
  • Curry Leaves - to liking
    Tomato Paste
  • Tomato - 2 medium sized
  • Red Capsicum - 1/2 cup cut into thick cubes
  • Mint Leaf - 2
  • Coriander Leaves - 1 Tbsp. chopped
  • Garlic cloves - 4
  • Whole Peppercorns - 1/2 Tbsp.
  • Italian Herbs (optional) - 1/2 tsp.
  • Cumin Seeds - 1/4 tsp.

Instructions

    Cook Cauliflower
  1. In a large pot, place the entire head of cauliflower (leaves removed) and cover it with water
  2. Bring it to rolling boil add little amount of salt.
  3. Reduce heat, cover and simmer for 10-12 minutes.
  4. Drain the water and set aside to cool then chop into small bite-size pieces.
    Prepare Tomato Paste
  1. In a pressure cooker add all the ingredients listed under "Tomato Paste" above
  2. Cook for 2 whistles in medium heat and remove for stove top
  3. Wait until cooled before opening the lid of pressure cooker (10 minutes or so)
  4. When the pressure cooked contents are warm to touch, use a blender to blend the mixture to a paste form and set aside
    Prepare Masala
  1. Heat oil in a medium sized pot. Add onion and sauté until translucent
  2. Add ginger, garlic sauté until raw aroma leaves ( approx.2 minutes) then add green chillies, jeera and curry leaves
  3. Add coriander, turmeric, chilli and garam masala powder sauté for a minute in low-medium heat
  4. Raise the heat to medium and add cubed potatoes, some water(~2 Tbsp.),salt and combine masala well for a minute
  5. Pour the tomato paste into the masala and bring to a boil
  6. Add in water, coconut milk cover the pot and cook the potatoes for 15 minutes.
  7. Add in the chopped cauliflower and cook for 5 more minutes
  8. Top it with chopped coriander leaves.
  9. Enjoy this tasty well prepared Cauliflower Tikka Masala with roti or rice

Notes

To save time prepare the tomato paste while waiting for the cauliflower to cook
