Ingredients

  • Mutton - 1 kg (cut into medium pieces) wash & squeeze to remove water
  • Onion - 4 nos thinly sliced
  • Green chilli - 6 chopped
  • Ginger - 2" piece chopped
  • Garlic - 1 pod chopped
  • Curry leaves - 3 stems
  • Water - 1/2 cup
  • Clove - 4
  • Cinnamon stick - 1" pieces - 4
  • Cardamom - 4
  • Oil - 4 tbsp
  • Coconut milk - 1 cup
  • Pepper powder - 2 tsp
  • Garam masala powder - 1 tsp
  • Coriander leaves - 2 tbsp chopped

Instructions

  1. Heat oil in a cooker over medium heat
  2. Add clove, cinnamon sticks and cardamom
  3. Nice aroma comes within seconds then add onion
  4. Saute and cook till it translucent
  5. Then add ginger, garlic, green chilli and half of curry leaves
  6. Saute well for 1 minute
  7. Add cleaned mutton, salt and 1/2 cup of water
  8. Close the lid and cook over medium heat, after the first whistle bring the heat to low - medium
  9. Cook another 10 minutes or till the mutton becomes tender
  10. When it cool open the lid and add thick coconut milk into it
  11. Cook for 1 minute then add garam masala powder and pepper powder
  12. Switch off the stove and garnish stew with half of the curry leaves and coriander leaves
  13. Enjoy with ghee rice or rotis
