Best Potato Stew

Ingredients

  • Potato - 4 nos cubed
  • Onion - 2 nos thinly sliced
  • Green chilli - 5 nos chopped
  • Garlic - 1 tbsp chopped
  • Ginger - 1 tbsp chopped
  • Curry leaves - 2 stems
  • Garam masala powder - 1 tsp
  • Crushed pepper - 1 tsp
  • Water - 1/2 cup
  • Thick coconut milk - 1 cup ( you can use 1/2 cup of coconut milk powder to make coconut milk)
  • Oil - 4 tbsp
  • Clove - 3
  • Cinnamon stick - 1" piece
  • Cardamom - 2 nos
  • Salt - to taste or 2 tsp
  • Corriander leaves - 2 tbsp

Instructions

  1. Heat oil in a sauce pan over medium heat
  2. Add clove, cinnamon stick and cardamom.
  3. Wait till nice aroma comes from the spice
  4. Add onion and saute till translucent
  5. Now add ginger, garlic, green chilli and curry leaves
  6. Saute well until raw smell disappears or 30 seconds
  7. Now add potato cubes, water and salt
  8. Cover the pan and cook for 15 minute over medium heat until potatoes are tender
  9. Now add thick coconut milk, garam masala powder, crushed pepper
  10. In low heat cook for 1 minute
  11. Garnish with coriander leaves
  12. Serve hot with any roti
  13. Enjoy
