Vegetable Chow Mein

 

Vegetable Chow Mein is a dinner speciality stir fried noodles at our house. It’s easy to prepare and healthy too. You can easily give variety to this dish by adding eggs or any meat. Soy sauce goes well as a dip with Vegetable Chow Mein. If you like to have broth with your Chow Mein feel free to add vegetable, chicken or beef broth to it with a touch of extra spice.This dish is quite filling and can be a good meal when you are hungry.

Ingredients


Chow Mein Noodle – 1/2 pack

Oil – 5 tbsp

Onion – 1/2 thinly sliced

Garlic – 5 thinly sliced

Green chilli – 3 nos slit

Carrot – 1 small julienned

Cabbage – 1 cup thinly sliced

Green capsicum – 1/2 thinly sliced

Red & yellow capsicum – 1/4 cup thinly sliced (optional)

Soya sauce – 2 tbsp

Salt – to taste or 1/2 tsp

Pepper – 1/2 tsp

Vinegar – 1 tsp

Spring onion – 1/2 stalks

 


Preparation


Fill a big sauce pan with water and boil chow mein for 5 to 10 minutes, strain & string them using cold water (follow package instructions)

In a wide pan heat oil over medium heat and saute garlic for few seconds until raw smell fades

Add onion and saute for 1 minute, then add green chillies and carrot, toss for 1 minute

Next, add cabbage and green capsicum, toss for 30 seconds

Now add 1 tbsp of soy sauce, pepper powder and salt

Mix well using two hands or with spatula

Add boiled chow mien and toss well

Add thinly sliced red & yellow capsicum and toss it again

Finally, add 1tbsp of soy sauce and vinegar, mix well

Garnish with chopped spring onion and serve hot
