Whole Egg Masala Curry

Hot and Spicy Egg Masala Curry. A must try !

Ingredients

  • Egg- hard boiled - 4 nos
  • Onion - 3 thinly sliced
  • Tomato -1 1/2 cubed
  • Ginger - 1 tbsp chopped
  • Garlic - 1 tbsp chopped
  • Green chilli - 3 nos chopped
  • Curry leaves - 2 stems
  • Turmeric - 1 tsp
  • Chilli powder - 3 tsp
  • Pepper powder - 1/2 tsp
  • Garam masala powder - 1 tsp
  • Water - 1/4 cup
  • Salt as per your taste or 2 tsp
  • Oil - 4 tbsp

Instructions

  1. In a large pan, heat the oil and saute onion till it golden brown.
  2. Add ginger, garlic, green chilli and curry leaves.
  3. Saute well for 30 seconds.
  4. Add tomato and saute well for 1 min .
  5. Add turmeric, chilli powder,pepper powder, garam masala and salt. Saute well.
  6. Add water and bring to boil
  7. Place the boiled eggs in the curry and cover it with masala
  8. Simmer till the curry thickens.
  9. Serve hot with chappati, pal appam or ghee rice . ENJOY.
