Carrot Thoran

Carrot Thoran perfect side dish for rice or roti

Ingredients

  • Carrot - 4 cut into very small cubes
  • Onion - 1 small chopped
  • Green chilli - 3 nos slit lenghthwise
  • Curry leaves - few
  • Turmeric powder - 1/2 tsp
  • Chilli powder - 1/2 tsp
  • Salt - 1tsp or as per your taste
  • Water- 1/4 cup or 4 tbsp
    To temper :
  • Mustard - 1tbsp
  • Dry chilli - 2
  • Curry leaves - 2 stems
  • Oil - 2 tbsp

Instructions

  1. Heat a pan over medium heat and add oil
  2. Splutter the mustard then add dry chilli and curry leaves
  3. Add onion, greenchilli and saute well
  4. Add carrot, turmeric powder, chilli powder ,salt and water
  5. Cover and cook over medium heat for 5 minutes
  6. Saute in between
  7. Cook over low heat for another 5 minutes
  8. Remove from heat & transfer into a plate
  9. Enjoy with rice
