Egg Plant Fry | Vazhuthininga Porichathu

Tasty egg plant fry perfect side dish for rice


  • Eggplant - 4 nos ( can use any type of egg plant )
  • Chilli powder - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Rice powder - 2 tsp
  • Garam masala powder - 1/2 tsp or asafoetida powder - 1 pinch
  • Water 2 tbp to mix the powders
  • Curry leaves - few
  • Oil - for shallow fry or 4 tbsp


  1. Wash the eggplants
  2. Cut the eggplant into thin round slices and put it in a bowl filled with water. Drain the water afterwards
  3. Take another bowl, add chilli powder, turmeric powder, Rice powder , garam masala powder ,salt, 2 tbsp of water and curry leaves, mix well with a fork
  4. Add in the drained eggplant slices and combine, keep it aside for 5 minutes
  5. Heat oil in a wide pan over medium heat and shallow fry the eggplant in small batches
  6. Fry until golden brown and crisp, flip in between
  7. Transfer to a plate lined with paper towel
  8. Enjoy hot & crispy eggplant fry with rice
