Cucumber Pachadi | കക്കിരി പച്ചടി

 

Kakkiri Pachadi | കക്കിരി പച്ചടി is one of the main side dishes of Onam Sadhya. Pachadi can be prepared in various ways using cucumber, beetroot or okra. One of the family favorites is kakkiri/cucumber pachadi. Here I have prepared a step-by-step recipe video which is easy to follow along with printable recipe.

Ingredients

  • Cucumber - 1 big chop in to small pieces
  • Yogurt - 1 cup
  • Salt - 1 tsp or as per your taste
    For grind:
  • Coconut - shredded - 1/2 cup
  • Green chilli - 3 nos
  • Ginger - 1" piece
  • Curry leaves - 4 leaves
  • Cumin seeds - 1/2 tsp
  • Mustard seeds - 1/2 tsp
  • Water - 4 tbsps
    To temper:
  • Coconut oil - 1tbsp
  • Mustard seeds - 1 tsp
  • Urad dal - 1/2 tsp
  • Dry red chilli -2 nos
  • Curry leaves - 2 stems
  • Shredded coconut - 2 tbsp

Instructions

  1. Grind all the above mentioned ingriedients for grind with 4 tbsps of water
  2. Finally add 1 cup of yogurt,1/2 tsp of mustard and salt
  3. Blend it once more and pour it in to a bowl & add chopped cucumber
  4. Heat a pan over medium heat and pour oil
  5. When it hot add mustard and urad dal
  6. After it splutters add curry leaves , dry red chilli and shredded coconut
  7. saute for 30 seconds and pour it into the grinded mixture
  8. Serve with rice and pappadam
  9. Enjoy
