Sambar Curry

Ingredients

  • Toor dal - 100 gm
  • Potato - 2 nos
  • Carrot - 2 nos
  • Drumsticks - 2 nos
  • Okra - 5 nos
  • Onion - 1 big size or shallots - 6 nos
  • Shallot - 5 nos
  • Garlic - 6 nos
  • Tomato - 1 big size
  • Tamarind water - 1/4 cup
  • Turmeric - 1/2 tsp
  • Chilli powder - 1 tsp
  • Sambar powder - 2 tbsp or corriander powder - 1 tbsp
  • Salt to taste or 2 tsp
  • Water - 1/2 cup
    For temper:
  • Oil - 2 tbsp
  • Mustard - 1 tsp
  • Fenugreek - 1/4 tsp
  • Asafoetida powder - 1/4 tsp
  • Dry red chilli - 3 nos
  • Coriander leaves for garnish - 1 tbsp

Instructions

  1. Prepare by soaking tamarind in luke warm water and set aside
  2. In a cooker combine washed toor dal and all the vegetables [except okra] together
  3. Add 1/2 cup water, turmeric and salt
  4. Cook it in the medium heat and wait for the first whistle
  5. Remove from stove.
  6. Heat oil in a medium sized sauce pan and splutter mustard.
  7. Then add dry red chilli, fenugreek, asafoetida and curry leaves and saute for 30 sec or so .
  8. Lower the heat and add chilli powder, sambar powder and okra .
  9. Saute 1 min and add tamarind water.
  10. Boil for 3 mins in low heat.
  11. Now add toor dal and vegetable mix from cooker into sauce pan and bring to boil.
  12. Simmer for 2 mins, switch off the stove and garnish with coriander leaves.
  13. Serve hot with rice and Enjoy!
