Shrimp Coconut Curry

Shrimp in coconut cream with spices

Ingredients

  • Shrimp - 250 gm de- shelled and cleaned
  • Oil - 2 tbsp
  • Onion - 1 large thinly sliced
  • Green chilli - 4 nos cut lengthwise
  • Ginger - 1" piece crushed
  • Tomato - 1 small cubed
  • Curry leaves - 2 stems
  • Turmeric powder - 1/2 tsp
  • Chilli powder - 1 1/2 tsp
  • Coriander powder - 1 tsp
  • Salt to taste or 2 tsp
    To grind:
  • Coconut shredded - 3/4 cup
  • Fennel seeds - 1 tsp
  • Shallot - 2 nos
  • Water - 1/2 cup

Instructions

  1. In a sauce pan heat oil in medium heat and saute onion till its transparent
  2. Then add ginger, green chilli and curry leaves , saute well
  3. Add tomato & cook for 1 minute
  4. Add turmeric powder, chilli powder, coriander powder and salt, saute for 1 minute
  5. Add cleaned shrimp and 1/2 cup of water, close the lid
  6. Cook for 10 minutes over medium heat while stirring in between
  7. Meanwhile grind coconut with 1/2 cup of water into a smooth paste
  8. Add fennel seeds and shallots to the coconut mixture, grind it once more
  9. Now open the lid and add coconut mixture into the curry, add more water, if you prefer more gravy
  10. Cook over medium- low heat for 5 minutes , stir and add 1 stem of curry leaves at the end
  11. Enjoy with rice, dosa or any roti
