Shrimp Pulav | Chemmeen Pulav

Shrimp Pulav | Chemmeen Pulav

Ingredients

    For marinate :
  • Shrimp - 250 gm de - shelled and cleaned
  • Chilli powder -1 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Ginger - 1/2 tbsp chopped
  • Garlic - 1 tbsp chopped
  • Garam masala powder - 1/2 tsp (optional )
  • Salt - 1 tsp
    For fry :
  • Oil - 1/4 cup or 5 tbsp
    For Saute :
  • Oil + ghee - 4 tbsp
  • Cloves - 4 nos
  • Cinnamon - 1 " pieces - 3 nos
  • Cardamom - 2 nos
  • Bay leaves - 1 (optional)
  • Onion - 2 slice thinly
  • Green chilli - 2 chopped
  • Ginger - 1/2 tbsp chopped
  • Garlic - 1/2 tbsp chopped
  • Potato - 1 cubed into small pieces
  • Tomato - 1 small cubed
  • Lime juice - 2 tbsp
  • coriander leaves - 2 tbsp chopped
  • Garam masala powder - 1 tsp
  • Basmati rice - 1 cup (250ml) washed & drained
  • Boiled water - 3 1/2 cup ( 1 cup = 250ml )
  • Salt - 1 1/2 tsp or as per your taste
    For garnish :
  • Spring onion - 2 tbsp chopped
  • Coriander leaves - 2 tbsp chopped
  • Fried cashews - 1/4 cup

Instructions

  1. Soak washed rice for 1/2 an hour, then drain it well
  2. In a non - stick pan heat oil over medium heat and fry the half of the marinated shrimp for 5 minutes,then bring the heat to medium - low
  3. Flip the shrimp and fry for another 5 minutes or until it is brown
  4. Transfer it to a plate and keep aside
  5. In a heavy bottom pan heat oil+ ghee and add cloves, cinnamon,cardamom & bay leaves
  6. Saute for few seconds , then add onion and saute till it is slightly golden brown
  7. Add ginger, garlic and green chillies, saute for 1 minute in medium - low heat
  8. Then add potato cubes , saute well and add tomato cubes, cover and cook for 3 minutes
  9. Add half of the marinated shrimp , garam masala powder ,salt and coriander leaves
  10. Stir well, finally add rice and saute for 5 minutes
  11. Pour the boiled water, cover and cook over medium heat for 5 minutes
  12. Reduce the heat to medium - low , add lime juice and cook for another 15 minutes, flip in between
  13. Switch off the stove , place the fried shrimp on the top of the rice
  14. Garnish pulao with spring onion, fried cashews and coriander leaves
  15. Enjoy hot with raita ( combine 1/2 cup of Yogurt with 1/2 chopped onion ,1 greenchilli ,few coriander leaves & 1 /4 tsp of salt)
