Shrimp Rice

Shrimp Rice

Mix of shrimp, spice and rice. Just Delicious

Ingredients

  • Shrimp - 1/2 kg de - shelled & cleaned
    For marinate:
  • Turmeric - 1/2 tsp
  • Chilli powder - 2 tsp
  • Ginger - 1/2 tsp crushed
  • Garlic - 1/2 tsp crushed
  • Garam masala powder - 1/2 tsp
  • Pepper powder - 1/2 tsp
  • Salt to taste or 1 tsp
  • Oil - 1 tsp
    For masala :
  • Oil - 2 tbsp
  • Onion - 2 thinly sliced
  • Ginger - 1 tbsp chopped
  • Garlic - 1 tbsp chopped
  • Green chillli - 5 nos chopped
  • Tomato - 1 nos cubed
  • Curry leaves - 1 stem
  • Coriander leaves - 1 tbsp
  • Mint leaves - 1 tbsp
  • Pepper powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Lime juice - 1 tbsp
  • Garam masala powder - 1/2 tsp
  • Salt to taste or 1 tsp
  • Water - 1/4 cup
    For rice :
  • Basmathi rice - 2 cups
  • Water - 5 cup
  • Oil + ghee - 3 tbsp
  • Salt - 1 1/2 tsp
  • Onion - 1/2 thinly sliced
  • Clove - 4
  • Cinnamon - 1" piece
  • Cardamom - 2

Instructions

  1. In a bowl combine cleaned shrimp with above mentioned marinate ingredients
  2. Keep it aside for 15 minutes
  3. Meanwhile, wash & soak rice 1/2 an hour, then drain it
  4. Heat oil in a pan over medium heat & fry shrimp for 10 minute or till it done, saute in between
  5. Transfer shrimp to a plate & keep aside
  6. In a deep bottom pan heat oil over medium heat & saute onion till slightly golden brown
  7. Then add ginger, garlic, green chilli, curry leaves & mint leaves , saute for 1 minute
  8. Add tomato ,saute for 30 seconds, add pepper powder ,coriander powder ,salt &water
  9. Cover and cook for 3 minutes and reduce the heat to low
  10. Then add fried shrimp , garam masala powder, lime juice & coriander leaves
  11. Cook for 1 minute & switch off the stove
  12. Heat oil in a deep bottom pan over medium heat & add clove, cinnamon and cardamom,
  13. Wait for few seconds , then add onion and saute it until slightly golden brown
  14. Then add cleaned rice and saute 5 to 8 minutes in medium heat , stir constantly
  15. Pour the boiled hot water and add salt
  16. Cook in medium heat for 5 minutes , then bring heat to medium - low for 15 minutes
  17. Stir 2 to 3 times in between & switch off the stove ,
  18. Now heat the masala mixture in medium - low heat and gently mix cooked rice with masala
  19. Cover and cook for 2 to 3 minutes
  20. Switch off the stove & Garnish with coriander leaves
  21. Serve hot with raita
