Vegetable Fried Rice | Spicy

Ingredients

    For rice ;
  • Basmati rice - 1 cup
  • Water - 3 cups
  • Olive oil - 1 tbsp
  • Salt - 1 tsp
    For Vegetable mix :
  • Olive oil - 2 tbsp
  • Onion - 1/2 chopped
  • Ginger - 1 " piece chopped
  • Garlic - 4 chopped
  • Carrot - 1 chopped
  • Beans - 1/4 cup chopped
  • Cabbage - 1/4 cup chopped
  • Frozen green piece - 1/4 cup
  • Capsicum - 1/2 cubed
  • Cauliflower (optional ) - 1/4 cup chopped
  • Soya sauce - 3 to 4 tbsp
  • Vinegar - 1 tbsp
  • Red chilli sauce - 1 tbsp
  • Salt - 1 tsp or as per your taste
  • Pepper powder - 2 tsps
  • Sesame oil - 1 1/2 tsp
  • Spring onion - 2 tbsp chopped for garnish

Instructions

  1. In a pressure cooker boil 3 cups of water and add rice that has been washed and drained
  2. Add 1 tbsp of olive oil and salt, close the lid and cook until one whistle
  3. Remove from stove and allow the steam to be released
  4. Open the cooker and fluff the rice with a fork and allow to cool
  5. In a wok or non-stick pan, heat olive oil over medium heat
  6. Add garlic and ginger, saute for 30 seconds,then add onion and salt, saute for 1 minute
  7. Now add all other vegetables except capsicum, cook about 1 or 2 minute
  8. Finally, add capsicum and saute for 30 seconds
  9. In a small bowl mix soya sauce, red chilli sauce (hot sauce) and vinegar
  10. Bring the heat to high and add the sauce into the vegetable mix, stir continuously
  11. Add the cooked rice and stir, drizzle with sesame oil , finally add pepper powder & stir again
  12. Garnish with spring onion
  13. Enjoy hot with chilli chicken or cauliflower manchurian
