Shrimp Stuffed Rice Roti | Shrimp Pathiri | Chemmeen Ari Pathiri

Shrimp Stuffed Rice Roti | Shrimp Pathiri | Chemmeen Ari Pathiri

Ingredients

    For the pathiri :
  • Boiled rice - 2 cups
  • Coconut - 3 cup shredded
  • Fennel seeds - 4 tbsp
  • Cumin seeds - 2 tbsp
  • Shallot - 15 nos
  • Onion - 1 small chopped
  • Salt to taste or 3 tsp
  • Raw Rice powder - 2 to 3 cups
    For Fry :
  • Shrimp -500 gm de - shelled and cleaned
  • Turmeric powder - 1/2 tsp
  • Chilli powder - 1 tsp
  • Garam masala powder - 1/2 tsp
  • Ginger garlic paste - 1 tsp
  • Salt - 1 tsp
  • Oil - 3 tbsp
    For the masala :
  • Ghee + oil - 1 1/2 tbsp
  • Onion - 3 chopped
  • Tomato - 2 medium cubed
  • Ginger - 1" piece chopped
  • Garlic - 1 tbsp chopped
  • Green chilli - 4 chopped
  • Curry leaves - 1 stem chopped
  • Coriander leaves - 1 tbsp chopped
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Chilli powder - 2 tsp
  • Coriander powder - 2 tsp
  • Garam masala powder - 1 tsp
  • Salt to taste or 1 tsp
    For coconut paste:
  • Grated coconut - 3/4 cup
  • Fennel seeds - 1/2 tsp
  • Shallots - 3
  • Water - 1/4 cup or more

Instructions

    Prepare Rice :
  1. In a sauce pan bring 2 litres of water to rolling boil, add rice and remove pan from stove and set aside
  2. Let the rice soak for a minimum of 3 hours
    Method of grind the rice :
  1. In a food processor/blender, add the washed,soaked rice with 2 tsp of salt and 1/2 cup of water
  2. Grind it coarsely & transfer into a larger bowl
  3. Next add fennel seeds, cumin seeds, shredded coconut & 1/4 cup water in a grinder and grind
  4. Finally add onions & shallots, grind it coarsely
  5. Add the coconut mixture into the rice mixture and knead well
  6. Slowly add enough rice powder to get the dough tight
    Method of prepare masala :
  1. In a bowl marinate cleaned shrimp with turmeric powder, chilli powder ,garam masala powder & salt. Set aside for 10 mins
  2. In a pan heat oil over medium heat and fry shrimp until slightly golden brown
  3. Flip in between, it will take 8 to 10 mins, remove from oil & keep aside
  4. In the same pan add 2 tsp of ghee + oil and saute onion till its translucent
  5. Then add ginger, garlic , green chili & curry leaves, saute for 1 minute
  6. Now add cubed tomatoes and saute for 3 minutes
  7. Add turmeric powder, chilli powder, coriander powder and salt, saute for 30 seconds
  8. Then add grinded coconut with fennel seeds shallots and water, cook for 5 minutes over medium low heat or until the raw smells of coconut disappears
  9. Then add fried shrimp , pepper powder , garam masala powder & coriander leaves
  10. Saute for 1 minute and switch off the stove, keep aside
    For assembling pathiris :
  1. Take two lemon size portion of rice from the dough and roll and flatten it on a parchment sheet or banana leaf instead
  2. Flatten the dough using the heel and fingers of your palm
  3. Put 3 tbsp of masala in the center of the pathiri and spead it all around
  4. Make another pathiri, following the instructions above on another sheet without masala
  5. Cover the masala filled pathiri with the plain one and press the edges well
  6. In a steamer or adachambu bring 1 litre of water to boil.
  7. Take the pathri carefully with sheet or banana leaf and place it into the steamer
  8. Steam cook for 30 minutes or until the pathiri is firm to touch
  9. Steam cook two or three pathiris at a time
  10. Take the pathiris out carefully, wearing an oven mitt
  11. Enjoy
