Kadumanga | Manga Achar | Spicy Mango Pickle | Kerala Style

Kadumanga | Manga Achar | Spicy Mango Pickle | Kerala Style

Ingredients

  • Raw mango - 4 nos chopped (washed & drained )
  • Salt - 2 tsp
  • Garlic - 15 nos cut into half lenghthwise
  • Ginger - 1 " piece chopped
  • Curry leaves - 2 stems chopped
  • Chilli powder - 4 tbsp
  • Turmeric powder - 1/2 tsp
  • Fenugreek powder - 1/4 tsp
  • Asafoetada powder -, 1/4 tsp
  • Vinegar - 2 tbsp
  • Sasame oil - 1/4 cup

Instructions

  1. In a big bowl combine chopped raw mangoes with salt , let it sit for 1/2 an hour
  2. In a pan heat saseme oil over medium heat
  3. Add mustard seeds and allow to splutter
  4. Immediately add curry leaves, garlic and ginger , saute until it is slightly brown
  5. Switch off the stove and add chilli powder , turmeric powder, fenugreek powder and asafoetada powder, saute well
  6. Then add chopped raw mangoes marinated in salt , add 2 tbsp of vinegar & mix well
  7. When it has cooled , store in a dry glass container
  8. Refrigerate after one day, use it within two weeks
  9. Enjoy kadumanga with hot rice
