Sadhya Olan Curry | Sadhya White Potato Curry | Kerala Style

Sadhya Olan Curry | Sadhya White Potato Curry | Kerala Style

Ingredients

  • Potato - 4 nos peeled , washed & cut into cubes
  • Onion - 1 thinly sliced
  • Green chilli - 5 or 6 slit lengthwise
  • Ginger 1 1/2 " piece crushed
  • Curry leaves - 2 stems
  • Salt - 1.5 tsp
  • Water - 3/4 cup
  • Coconut oil - 1 tbsp
  • Coconut milk - 1 cup fresh or ( add 5 tbsp coconut powder into 1 cup of warm water & mix well )

Instructions

  1. In a sauce pan combine cubed potatoes, onion, ginger, 1 stem of curry leaves
  2. Add 3/4 cup of water and 1 tsp of salt, cover and cook over medium heat about 10 minutes
  3. Then reduce the heat to medium - low and cook for another 10 minutes or until potatoes are cooked well and gravy becomes thick
  4. Add green chilies and cook for another 2 minutes
  5. Now add coconut milk and reduce the heat to low
  6. Cook for 1 or 2 minutes, then add 1 tsp of coconut oil and 1 stem of curry leaves
  7. Switch off the stove and let it sit for 15 minutes or so
  8. Enjoy this potato curry with rice or any roti
    Note ; you can pressure cook the potatoes along with onion , ginger, salt & 1/2 cup of water until first whistle , switch off the stove & allow to cool by itself, then open the cooker and follow the instruction 4 to 7
