Best malabar style nadan chemmeen roast made with spicy masala

Ingredients

  • Shrimp - 250 gm de-shelled and cleaned
    For marinate :
  • Ginger paste - 1 tsp
  • Garlic paste - 1 tsp
  • Chilli powder - 2 tsp
  • Turmeric - 1/2 tsp
  • Salt - 3/4 tsp or as per your taste
    For saute :
  • Oil - 1 tbsp
  • Onion - 2 nos thinly sliced
  • Tomato - 1 cubed
  • Green chilli - 2 slit
  • Garlic - 6 cloves thinly sliced
  • Curry leaves - 2 stems
  • Chilli powder - 1/2 tsp
  • Salt - 1/2 tsp
  • Pepper powder - 1 /2 tsp
  • Garam masala powder - 1/2 tsp ( optional )
  • Oil - 4 tbsp

Instructions

  1. Marinate cleaned shrimp with the above mentioned ( for marinate ) ingredients
  2. Let it sit for 15 minutes
  3. Heat oil in a pan over medium heat and fry marinated shrimp till it is cooked (about 15 minutes)
  4. Flip halfway through and bring the heat to medium - low
  5. Turn off the stove and transfer the shrimp onto a plate
  6. In the same pan add 1 tbsp of oil, when it's hot add thinly sliced garlic and saute for 1 min
  7. Add onion and saute till it's transparent, add 1/2 tsp of chilli powder and stir well
  8. Then add the cubed tomato, curry leaves and green chillies, cook until tomatoes are soft
  9. Now add the fried shrimp and mix well.
  10. Finally add pepper powder and garam masala powder and few curry leaves
  11. Switch off the stove and transfer to a plate
  12. Enjoy the spicy shrimp roast with plain rice, ghee rice or roti
