Thalassery Special Meat Masala Stuffed Bun

Ingredients

  • Bun - 4 nos
  • Hard boiled eggs - 2 cut into 2 halves
  • Chicken - 250 gm cut into medium pieces or (chicken breast)
  • Turmeric powder - 1/2 tsp
  • Chilli powder - 1 tsp
  • Garam masala powder - 1/2 tsp
  • Salt - 1.5 tsp or as per your taste
  • Water - 1/2 cup
    For masala :
  • Oil &Ghee - 2 tbsp
  • Onion - 2 big chopped
  • Green chilli - 4 nos chopped
  • Ginger - 1" piece crushed
  • Garlic - 1 tbsp chopped
  • Curry leaves - 1 stem chopped
  • Coriander leaves - 1 tbsp chopped
  • Pepper powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Salt to taste or 1.5 tsp
    For seal :
  • All - purpose flour - 1/4 cup
  • Water - 4 to 5 tbsp or enough water for thick mixture
  • Egg - 1 nos beaten
    For toast:
  • Oil + ghee - 3 tbsp
  • Egg - 1 nos beaten with a spoon

Instructions

  1. In a sauce pan combine cleaned chicken with turmeric powder, chilli powder & garam masala
  2. Add 1/2 cup of water and salt, cook it over medium heat for 10 minutes
  3. Then bring the flame to low - medium & cook for 10 minutes more
  4. Bring the heat to medium and boil till the gravy becomes thick, saute in between
  5. Allow it to cool & shred the chicken using your fingers
  6. Heat oil in a pan over medium heat & saute onion with salt till it transparent
  7. Add ginger , garlic, green chilli , curry leaves and coriander leaves, saute for 1 minute
  8. Then add shredded chicken, pepper powder and garam masala powder
  9. Saute for 1 minute and switch off the stove
  10. Make a small round hole on the side of the bun & remove some of the breading and keep aside
  11. Then stuff 2 tbsp of meat masala & half of the egg, then 2 tbsp of meat masala
  12. At the top place some of the removed breading & seal with all - purpose flour mixture
  13. In a pan heat 2 tbsp of oil & place sealed side of the bun down, cook 1 minute in low heat
  14. Repeat this process for each bun & keep it aside
  15. Next dip entire sides of bun into the egg mixture
  16. Add 2 tsp of ghee in the same pan and toast the bun on all sides
  17. Repeat this process for each bun & transfer to a plate
  18. Enjoy with tea
