Malabar Style Shrimp Rice Ada

Ingredients

  • Boiled rice (puzhungalari) - 1 cup
  • Water - 2 ltrs (for soak the rice )
  • Rice powder - 2 to 3 cup
  • Water - 1 cup
  • Salt - 2 tsp
  • Oil - 1 tbsp
  • Ghee - 1 tbsp
    For Fry :
  • Shrimp - 250gm de - shelled , cleaned & make to small pieces
  • Turmeric powder - 1/2 tsp
  • Chilli powder - 1 tsp
  • Garam masala powder - 1/2 tsp
  • Salt - 1 tsp
  • Oil - 3 tbsp
    For masala :
  • Ghee + oil - 1 1/2 tbsp
  • Onion - 2 chopped
  • Ginger - 1" piece chopped
  • Garlic - 1 tbsp chopped
  • Green chilli - 3 chopped
  • Curry leaves - 1 stem chopped
  • Coriander leaves - 1 tbsp chopped
  • Pepper powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Salt to taste or 1 tsp

Instructions

  1. In a deep bottom sauce pan boil 2 ltrs of water over medium heat
  2. When it reaches boil add washed rice and cover with a lid
  3. Switch off the stove and Soak the rice for minimum 3 hours
  4. In a bowl marinate cleaned shrimp with turmeric powder, chilli powder ,garam masala powder & salt. Set aside for 10 mins
  5. In a pan heat oil over medium heat and fry shrimp until slightly golden brown
  6. Flip in between, it will take 8 to 10 mins, remove from oil & keep aside
  7. In the same pan add 1 tsp of ghee and saute onion for 1 minute
  8. Then add ginger, garlic , green chili & curry leaves, saute for 1 minute
  9. Then add fried shrimp , pepper powder , garam masala powder & coriander leaves
  10. Saute for 1 minute and switch off the stove, keep aside
  11. Now wash the soaked rice and drain
  12. In a food processor grind the rice with 1 cup of water and salt ( add more water if you need )
  13. Grind the rice into a fine paste
  14. Transfer the rice paste into a bowl and gradually add rice powder , knead it well
  15. Spread a little oil on your palm and take a lemon sized amount from the rice mixture
  16. Take one small sheet of parchment paper and spread some oil on it
  17. Place the rice ball into it , press it with your palm and make a small (4 inch) circle shape
  18. Make sure its not too thin or thick ( make 1/4 " thick)
  19. Place 1 - 2 tbsp of prepared masala on half side of the circle & fold it, press the edges well
  20. In a steamer or adachambu bring 1 litre of water to boil.
  21. Then place the ada carefully with parchment paper
  22. Place 3 or 4 adas in a row , steam it for 30 minutes or till it done
  23. When it cool transfer to a plate and serve with tea
