I prepared this Spicy Shrimp Spring Roll as a fusion of Chinese and Malabar Style. This Shrimp Spring Roll is a great tea-time snack. It can be eaten with ketchup, plum sauce, tamarind sauce or soy sauce. All this will give a strong punch to this Shrimp Spring Roll in a good way 😉 You can prepare this pretty easily feel free to make variations to this example a samosa style..? All kids are usually shrimp fans this can be one way to get the vegetables into their system too. This spring roll will taste as a good Appetiser with a Fried Rice or Noodles meal. Ingredients
- Uncooked Shrimp – 250gm cleaned & chopped
- Chilli powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Salt – 1/2 tsp or as per your taste
- Garam masala powder – 1/2 tsp (optional)
- Ginger – garlic paste – 1/2 tsp
- Garlic – 2 to 3 cloves minced
- Ginger – 1/4 tsp
- Green chilli – 2 nos chopped
- Cabbage – 1 1/2 cups cut thinly lengthwise
- Carrot – 1/2 cup cut thinly lengthwise
- Capsicum – 1/2 cup thinly sliced (2″) or chilli (3 or 4) chopped
- Green Onion – 1/4 cup thinly chopped
- Coriander Leaves – 1 tbs
- Cornstarch – 1 tsp
- Sugar – 1/2 tsp
- Salt – to taste
- Soy Sauce – 1 1/2 tbs
- Oil – 2 tbs + deep fry amount or 3/4 cup
- Chinese Spring Roll – 10 (15cm) wraps
Preparation
Marinate cleaned shrimp with chilli powder, turmeric powder, salt, ginger- garlic paste and garam masala powder for 15 minutes
Heat 4 tbsp of oil in a pan on medium heat and fry the shrimp lightly golden brown, turn in between
Remove from oil and keep aside
Heat 2 tbsp of oil in a wide pan over medium heat, add garlic, saute few seconds
Now add cabbage and carrot, saute for 3 minutes
Then add capsicum and green chilli saute for 30 seconds
Meanwhile, Take a glass or small bowl and combine cornstarch, sugar, salt and soy sauce until smooth
Now add in the cornstarch mix, combine and cook until thickened about 1 min or so
Next, add the fried shrimp, green onion or coriander to this and mix well. Set aside to cool
Prepare spring rolls:
Use one spring roll wrapper at a time. Cover the rest with a damp paper or cotton towel. This is important
Add about 1 to 2 tbs of prepared masala to the wrapper and fold it spring roll style
Deep Fry:
Heat oil in a kadhai and when hot from spring rolls 3 -5 minutes, turning occasionally until it turns golden brown.
