Super Moist and Fluffy Chocolate Buttermilk Cake like never before. To prepare this cake I took a different from the traditional method of creaming Butter and Sugar. The batter was prepared using the Reverse Creaming Method and Did it make a difference..Wooh..

Super Moist and Fluffy Chocolate Buttermilk Cake

Super moist and delicious cake. A MUST TRY!!

Ingredients

    Dry Ingredients
  • All-purpose flour (sifted) - 1 1/2 Cup
  • Sugar - 1 Cup
  • Baking Soda - 3/4 Tsp
  • Baking Powder - 1 Tsp
  • Coffee Powder - 1/4 Tsp
  • Unsweetened Cocoa Powder - 1/2 Cup (sifted)
  • Salt - 1/4 tsp
    Wet Ingredients
  • Milk - 3/4 Cup
  • Vinegar - 1 1/2 Tbsp
  • Eggs - 2
  • Vanilla Essence - 1/2 Tsp
  • Oil - 1/4 Cup + 1 Tbsp
  • Hot Water - 5- 6 Tbsp

Instructions

  1. All ingredients must be at room temperature.
  2. Preheat oven to 350 deg F, prepare a 8 inch pan - parchment paper
  3. Mix all dry ingredients (except Cocoa Powder and Coffee Powder) using a balloon whisk until all are well incorporated with each other.
  4. Add vinegar to milk and set aside for 10 -15 minutes to create your Buttermilk
  5. In a small bowl , brew the Coffee powder in 2 tbsp hot water and pour to melt the Cocoa powder along with about 4 Tbsp of hot water. No lumps should remain and set aside
  6. Add Oil in short amounts to flour and using beater mix it until clumps appear. Do not over-mix.
  7. In another bowl crack the eggs, buttermilk, vanilla essence, oil (1 Tbsp) and blend it using a fork. No need to mix too much.
  8. Add 1/2 of the above wet mixture to flour mix and using beater beat at medium speed for about 2 to 3 minutes. Batter would be thick and fluffy.
  9. Add in remaining wet mixture in 2 batches, beat for about 20 sec (each batch) to blend the mixture into batter
  10. Finally add in the prepared cocoa mixture into batter and mix it with spatula to combine.
  11. The batter won't be thick it would be more on watery side.
  12. Bake for about 30- 35 min in preheated oven. After baking time, Insert a toothpick at the center and see if it comes out clean.
  13. Let the cake sit in the pan for about 10 min before removing
  14. Let the cake cool completely before icing.
  15. TIP:: When cake is warm cover it using a plastic wrap or foil and place it in fridge, this will help keep cake moist and fresh
