Banana Chocolate Chip muffin is one of my favourites. It’s a good food for breakfast. Most kids would love to eat this with a glass of milk. You can change the ingredients of this recipe to your preference. Try adding raisins, various nuts, or jam this muffin would even still taste great!. You can also substitute some brown sugar instead of white.
Tip : Please do not over mix this batter. A whisk is best for mixing part in this Banana Chocolate Chip Muffin recipe. I prefer not to use a beater for this recipe. If the batter is not enough to cover all holes of muffin pan.. just fill each with half water.
Now let’s get into making our Delicious Banana Chocolate Chip Muffin !!
All Purpose Flour – 1 1/2 cup
Baking Powder – 1 tsp
Baking Soda – 1 tsp
Salt – 1/2 tsp
Ripe Banana Mashed – 3 nos
White Sugar – 3/4 cup
Egg – 1
Oil or Melted Butter- 1/3 cup
Milk – 1 Tbsp
Cardamom – 1/2 tsp
Chocolate Chips – 3 Tbsp
Muffin Liners – Large (opt)
Method Of Preparation
Mash bananas with a fork and set aside
Sift flour, baking powder, baking soda, salt and combine – using fork is a good idea
Whisk oil, sugar – it’s ok if lumps remain – no need to use beater
Add in egg, milk, cardamoms whisk only until combined – Not too much
Mix the mashed bananas into this mixture
Now fold in flour mixture slowly into the banana mixture. Again until not too much but make sure you can’t see the flour
Add in the chocolate chips and combine slightly
Cover the bowl and put it in the fridge for an hour or more
Preheat the oven to 425 deg F, this might take a while
After line the muffin liners in a muffin pan. You can use the cooking spray on the liners if you wish
Cover the liners almost up to the brim with the batter
Place the muffin pan the middle rack and bake it for about 8-10 min
Then reduce the heat to 350 deg F, and bake for another 12 min or so until the edges are golden brown- Don’t open the oven to reduce the heat
Remove pan from oven and insert a toothpick or knife in the middle of the muffin and if it comes clear. Muffin is ready.
Let it remain in the pan for 2 min or so and cool all the muffin on a rack
