Mixed Veg Egg Noodles

  • Noodles - 3 pack
  • Olive oil - 2 tbsp
  • Onion - 1/2 thinly sliced
  • Carrot - 1 cut 1 " lengthwise
  • Beans - 5 nos cut into 1" lengthwise
  • Capsicum - 1/2 cut into 1 " lengthwise
  • Green chilli - 2 slit
  • Soya sause - 2 tbsp
  • Vinegar - 1 tsp
  • Red chilli flakes - 1/2 tsp
  • Egg - 2 nos ( beat with a spoon & add 1/4 tsp pepper powder & 1 pinch of salt )
  • Oil or ghee - 1 tsp
  • Spring onion or green onion - 2 tbsp


  1. Cook the noodles (follow by package instruction. Look for Tip section at the bottom of this page) and keep aside
  2. In a pan heat olive oil over medium heat & saute onion till its transparent
  3. Then add carrot , beans and green chilli , saute for 1 minute
  4. Add capsicum and saute for 1 minute
  5. Close the pan with a lid and reduce the heat to low, cook for 1 minute
  6. Now add soya sauce, red chilli flakes and vinegar , bring the heat to medium and saute for 1 minute
  7. Add cooked noodles into this masala and mix well , remove from the stove
  8. In a small pan heat 1 tsp of ghee or oil in medium heat and scramble the egg
  9. Serve noodles hot and garnish with scrambled egg and spring onion
  10. Enjoy
  1. Cook the noodles in excess water and drain the water to remove the gum.Don't let the noodles get soggy.
  2. Add some oil and combine it into noodles gently, to avoid noodles sticking together
  3. Bring the heat to HIGH before adding soy sauce this is will bring out its nice aroma.But make sure to reduce heat soon after
