  • Urad Dal - 1 cup or 250gm
  • Shallot - 8 nos chopped
  • Ginger - 1" piece crushed
  • Green chilli - 6 nos chopped
  • Curry leaves - few chopped
  • Pepper corn - 1 tsp crushed
  • Salt to taste or 2 tsp
  • Oil - 1 cup


  1. Wash and soak urad dal in water for 2 to 3 hours
  2. Grind it into a smooth paste by adding little water ( You can use food processor or grinder )
  3. The batter should be thick to stick on hand
  4. In a bowl combine shallots,green chilli, pepper corns ,curry leaves, grinded uzhunnu and salt
  5. Mix well and keep aside for 15 minutes
  6. Heat oil in a pan over medium heat
  7. Apply cold water on your palm and take a lemon size portion from the uzhunnu mix
  8. Put it on your palm and press softly to get a round shape
  9. Make a hole in the middle with wet finger
  10. Slip it slowly into the hot oil one by one & deep fry till it reach golden brown
  11. Flip in between and transfer to a plate. Place a paper towel on plate to soak in additional oil
  12. Serve hot with chutney or sambar
