Spicy Chicken Roast | Kozhi Masala Roast

  • Chicken - 1 kg clean & cut into medium pieces
    For marinate:
  • Chilli powder - 4 tsp
  • Turmeric powder - 1/2 tsp
  • Ginger - 2 " piece chopped
  • Garlic - 10 chopped
  • Salt - 2 tsp
  • Water - 3/4 cup
    For saute :
  • Coconut oil - 4 tbsp
  • Garlic - 6 nos cut into lengthwise
  • Small onion (shallots) - 3/4 cup thinly sliced
  • Curry leaves - 3 stems
  • Green chilli - 4 nos slit
  • whole pepper - 2 tbsp crushed
  • Garam masala powder - 1 tsp


  1. In a deep bottom pan combine cleaned chicken with above mentioned marinate ingredients except for water, keep aside for half an hour
  2. Add 3/4 cup of water and cook the marinated chicken over medium heat for 10 minutes
  3. Stir in between , bring the heat to medium - low and cook the chicken another 10 minutes or until the chicken is tender and gravy is thick, switch off the stove
  4. In a big pan heat coconut oil over medium heat , add garlic, saute until it is slightly brown
  5. Then add onion and saute until it's slightly golden brown , add green chilli & curry leaves
  6. Now add cooked chicken and saute well , flip in between
  7. Finally add fresh pepper powder and garam masala powder
  8. Cook in medium - low heat until the chicken becomes brown and until it's slightly crispy
  9. Switch off the stove and transfer onto a plate
  10. Enjoy this tasty dish with ghee rice or roti
