Easy Carrot Cake

Carrot Cake


  • All purpose flour - 1 cup
  • Baking soda - 1 tsp
  • Salt - 1/2 tsp
  • Cinnamon powder - 3/4 tsp
  • Canola oil or vegetable oil - 1/2 cup +2 tbsp
  • Eggs - 2
  • Cardamom powder or vanilla extract - 1/2 tsp
  • Carrot - 11/2 cup grated or 2 carrots grated
  • Cashews - 1/2 cup chopped
  • Raisins - 1/4 cup


  1. Preheat oven 350 degree F and grease or flour the 9" pan with butter or ghee
  2. In a bowl mix all-purpose flour,salt,baking powder and cinnamon powder using fork
  3. Take a large bowl and add oil,cardamom powder or vanilla extract and sugar
  4. Whisk these for 2 minutes,then add egg one at a time and whisk until blended or 5 minutes
  5. Add flour mixture slowly and fold the batter until there are no lumps
  6. Add grated carrots,cashews and raisins mix it into batter
  7. Pour the cake mixture into the greased pan and bake in preheated oven for 40 minutes.
  8. Insert a tooth pick into the center of the cake, if it comes out clean cake is ready to be taken out of oven
  9. Take the cake out wait for 10 minutes before removing from the pan. Place the cake in a cooling rack and cool it completely
  10. Garnish the cake with some nuts on top or can frost the cake with cream
  11. Cut the cake in squares and enjoy this delicious evening snack with tea
