Kerala Tea Cake

Best cake to go along with tea


  • Oil - 1/2 cup
  • Confectionery Sugar - 3/4 cup or 1 cup
  • Eggs - 2 nos
  • Baking powder - 1 tbsp
  • Cardamom powder - 1 tsp
  • All purpose flour (sieved) - 1 cup
  • Salt - a pinch
  • Milk - 1/4 cup


  1. Preheat oven to 350 F.Grease or flour a 9-inch circle pan
  2. In a bowl, mix flour, baking powder and salt using a fork. Absolutely no lumps
  3. In a large bowl, pour oil and add confectionery sugar
  4. Use a beater (medium speed) to beat the mix until its soft and creamy texture
  5. Beat in one egg at a time. Beat at high speed until it doubles in volume or bubbles form at top
  6. Add in cardamom powder mix well with a fork
  7. Add in the dry flour mix and fold it into the mixture while adding milk. Use a metal spoon or spatula. Alternatively, beat at lowest speed until all is mixed.
  8. Batter should have medium thickness not watery.
  9. Spread batter into prepared pan and bake for 25 - 30 minutes.To see if the cake is baked well, insert a toothpick or stick into center of cake to see if its comes clean.
  10. Allow the cake to cool in pan for 10 minutes
  11. Turn over the cake out into a paper towel and place it on to a flat dish
  12. Cut into the cake once its completely cooled
  13. Enjoy the tea cake with your tea.
